Turkish delight rocky road
- 400 gram white eating chocolate, chopped coarsely
- 200 gram raspberry and vanilla marshmallows, chopped coarsely
- 200 gram turkish delight, chopped finely
- 3/4 cup (110g) toasted macadamias, chopped coarsely
Method

1Line two 8cm x 25cm bar pans with baking paper, extending paper 2cm over all sides of pans.

2Stir chocolate in medium heatproof bowl over medium saucepan of simmering water until smooth; cool 2 minutes.

3Meanwhile, combine remaining ingredients in large bowl. Working quickly, stir in chocolate; spread mixture into pans. Refrigerate until set; cut into 1cm slices.
Notes
Turkish delight, also known as lokum, is a sweet made of a flavouring (traditionally rose, vanilla, pistachio or orange), sugar syrup, nuts and dried fruit bound together with mastic (gum arabic). According to legend, turkish delight was developed by one of the Ottoman sultans to appeal to the hundreds of women in his harem. The recipe, virtually unchanged for the past 500 years, proved an overwhelming success and this unique confectionery has become a sweet revered around the world.
