Vanilla panna cotta

Ingredients
Vanilla panna cotta
- 3 teaspoon gelatine
- 1/4 cup boiled water
- 1 1/2 cup buttermilk
- 1/4 cup caster sugar
- 2 wide strips orange zest, bruised
- 4 cardamom pods, bruised
- 1 cup vanilla yoghurt
- 1 teaspoon vanilla extract
- 1 punnet strawberries, washed, hulled
- 1 tablespoon honey, warmed
- 1 tablespoon fresh orange juice
Method
Vanilla panna cotta

1Lightly spray six 1/2-cup dariole moulds with oil.

2In a jug, whisk gelatine into water using a fork until dissolved. Set aside.

3In a medium saucepan, combine buttermilk, sugar, orange zest and cardamom. Stir over a low heat until sugar dissolves and mixture simmers.

4Remove from heat and stir the yoghurt and vanilla through. Discard zest and cardamom pods.

5Whisk gelatine into buttermilk mixture. Pour between prepared moulds. Arrange on a tray and chill for 3-4 hours, until firm.

6Toss strawberries in a bowl with honey and orange juice. Unmould panna cottas and serve with berries.
