Ingredients

Vegetable stir-fry
  • 1 tablespoon vegetable oil
  • 1 garlic clove, finely chopped
  • 1 tablespoon grated fresh ginger
  • 300 gram tatsoi
  • 500 gram choy sum, cut into short lengths
  • 1 punnet baby corn
  • 1 punnet snow peas, trimmed
  • 1/2 cup (125ml) sweet and sour sauce
  • 2 teaspoon sambal oelek
  • 1/4 cup coriander leaves

Method

Vegetable stir-fry
  • 1
    Heat oil in a wok or large frying pan-on medium. Stir-fry garlic and ginger until aromatic.

    Add vegetables, sauce and sambal oelek and stir-fry for 5 minutes, until vegetables are tender but crisp.

    Add coriander and stir-fry for another 30 seconds. Serve.

Notes

Sambal oelek is a salty paste made from chillies, garlic and ginger. It is Indonesia in origin and available in Asian section of supermarkets.
