Ingredients
Wafer roll biscuits
- 2 egg whites
- 1/3 cup (75g) caster (superfine) sugar
- 1/4 cup (35g) plain (all-purpose) flour
- 1/4 teaspoon mixed spice
- 1/4 teaspoon ground ginger
- 40 gram butter, melted
- 1 teaspoon teaspoon cinnamon sugar
Method
Wafer roll biscuits

1Preheat oven to 180°C. Grease two oven trays. Mark four 8.5cm circles on two sheets of baking paper; place on trays, marked-side down.

2Beat egg whites in a small bowl with an electric mixer until soft peaks form. Gradually add sugar, beating until dissolved after each addition. Fold in sifted flour and spices, then butter.

3Drop rounded teaspoons of mixture into marked circles, spread evenly to fill circles. Sprinkle each circle with a pinch of cinnamon sugar.

4Bake one tray of biscuits at a time, for 4 minutes or until lightly browned. Working quickly with one circle at a time, slide a metal spatula under circle then roll around a plastic chopstick; leave to firm. Repeat process with remaining circles.
Notes
Wafer rolls are best made on day of serving. Cinnamon sugar is available in the spice section of most supermarkets.
