Ingredients
Walnut and cinnamon baked peach halves
- 2 tablespoon plain flour
- 1/2 teaspoon ground cinnamon
- 20 gram butter
- 1/4 cup coarsely chopped walnuts
- 1/4 cup flaked almonds
- 2 tablespoon brown sugar
- 4 peaches, halved, stones removed
- vanilla ice-cream and maple syrup to serve
Method
Walnut and cinnamon baked peach halves

1Preheat oven to 200°C. Lightly grease a 12-cup, deep muffin pan.

2Sift flour and cinnamon together into a small bowl. Add butter. Using fingertips, rub in butter until mixture resembles fine breadcrumbs. Stir in nuts and sugar.

3Place peaches cut side up in muffin pan. Divide nut mixture evenly among peach halves. Bake for 15-20 minutes until golden and tender.

4Serve warm peaches with ice-cream and maple syrup.
Notes
If available, buy slip-stone peaches as the stone is easily removed without bruising the peach. You can subsitute any variety of nuts you prefer.
