Ingredients
Warm chicken and couscous salad
- 2 cup couscous
- 2 cup hot chicken stock
- 1 hot shredded barbecued chicken
- 1/2 cup halved semi-dried tomatoes
- 1/2 cup pitted black olives
- 100 gram cubed feta
- 1/4 cup slivered almonds, toasted
- 100 gram salad leaves (or baby rocket or baby spinach leaves)
- 1/4 cup olive oil
- 1 tablespoon lemon juice
Method
Warm chicken and couscous salad

1Place couscous in a large bowl. Pour over hot stock, allow to stand, 2 minutes, or until all liquid has been absorbed.

2Fluff with a fork and mix through chicken, tomatoes, olives, feta and almonds.

3Arrange couscous mixture on serving plates with salad leaves and drizzle with combined olive oil and lemon juice. Serve immediately.
