Ingredients

Warm chicken and couscous salad
  • 2 cup couscous
  • 2 cup hot chicken stock
  • 1 hot shredded barbecued chicken
  • 1/2 cup halved semi-dried tomatoes
  • 1/2 cup pitted black olives
  • 100 gram cubed feta
  • 1/4 cup slivered almonds, toasted
  • 100 gram salad leaves (or baby rocket or baby spinach leaves)
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice

Method

Warm chicken and couscous salad
  • 1
    Place couscous in a large bowl. Pour over hot stock, allow to stand, 2 minutes, or until all liquid has been absorbed.

    Fluff with a fork and mix through chicken, tomatoes, olives, feta and almonds.

    Arrange couscous mixture on serving plates with salad leaves and drizzle with combined olive oil and lemon juice. Serve immediately.
