Ingredients

Warm potato and bacon salad
  • 400 gram frozen potato chunks
  • 1 tablespoon vegetable or olive oil
  • 3 short-cut bacon rashers, rind removed
  • 1/2 small red onion, thinly sliced
  • 2 tablespoon dijonnaise
  • 1/4 cup semi-dried tomatoes,drained, halved
  • 50 gram baby spinach leaves
  • 1 tablespoon chopped chives

Method

    Preheat oven to 220°C/200°C fan forced. Line a baking tray with baking paper. Place potato on prepared tray. Drizzle with half the oil; toss to coat. Season with salt. Bake, turning trays halfway through cooking, for 25 minutes or until golden.

    Meanwhile, heat remaining oil in a medium trying pan over moderate heat. Add bacon; cook and stir for 5 minutes or until golden and crisp. Add onion; cook and stir for 2-3 minutes more or until just tender. Remove from heat.

    Place potato in a large bowl. Add bacon mixture, Dijonnaise, tomato, spinach and chives. Toss to combine. Serve.
