Ingredients
Warm potato and bacon salad
- 400 gram frozen potato chunks
- 1 tablespoon vegetable or olive oil
- 3 short-cut bacon rashers, rind removed
- 1/2 small red onion, thinly sliced
- 2 tablespoon dijonnaise
- 1/4 cup semi-dried tomatoes,drained, halved
- 50 gram baby spinach leaves
- 1 tablespoon chopped chives
Method
Warm potato and bacon salad

1Preheat oven to 220°C/200°C fan forced. Line a baking tray with baking paper. Place potato on prepared tray. Drizzle with half the oil; toss to coat. Season with salt. Bake, turning trays halfway through cooking, for 25 minutes or until golden.

2Meanwhile, heat remaining oil in a medium trying pan over moderate heat. Add bacon; cook and stir for 5 minutes or until golden and crisp. Add onion; cook and stir for 2-3 minutes more or until just tender. Remove from heat.

3Place potato in a large bowl. Add bacon mixture, Dijonnaise, tomato, spinach and chives. Toss to combine. Serve.
Notes
Meal ideas Frozen potatoes are great in salads, casseroles, soups and you can mash them. Health bite Baking frozen chips lowers the fat content. Lower cholesterol look for products that are fat reduced. Vegetarian Replace bacon with char-grilled vegetables.
