Watermelon and peach meringue parfaits
- 5 meringue nests
- 300 millilitre cream
- 400 gram peach slices in natural juice
- 400 gram seedless watermelon, peeled, cut into 1cm pieces
Method
Watermelon and peach meringue parfaits

1Break 4 meringue nests into small pieces. Finely crush remaining nest.

3Drain peaches; reserve 1/3 cup of the juice. Coarsely chop peaches. Place peaches in bowl with watermelon and reserved juice; stir to combine.

4Layer fruit and cream in four 1 1/4-cup serving glasses. Sprinkle tops with crushed meringue. Serve at once.
Notes
You will need about one-quarter of a small watermelon for this recipe. Use fresh berries such as strawberries instead of watermelon. Double recipe and layer in a large glass serving bowl.
