  • 1.2 kilogram watermelon, peeled, coarsely chopped
  • 1 cup cranberry juice
  • 1/2 cup caster sugar
  • 1/4 cup coarsely chopped mint leaves, plus whole leaves, to serve

Method

    In a food processor, process watermelon in batches until smooth. Add juice and sugar; process until smooth. Strain watermelon mixture; discard lumps. Stir in mint. Transfer to a 22cm square cake pan. Freeze for 3 hours or until just beginning to freeze.

    Using a fork, flake mixture to break up ice crystals. Cover with plastic food wrap, then with foil. Freeze for 4 hours more or until frozen.
