White chocolate and macadamia muffins

Surprise and delight the kids with these delicious white chocolate and macadamia muffins, or better still, get them involved in making them. They're dead easy and ready to be eaten in around 30 minutes.

Ingredients

White chocolate and macadamia muffins
  • 2 cup (300g) self-raising flour
  • 2/3 cup (150g) caster sugar
  • 3/4 cup (140g) white bits
  • 1/2 cup (75g) chopped macadamias, toasted
  • 60 gram butter, melted
  • 3/4 cup (180ml) milk
  • 1 egg, lightly beaten

Method

    Grease 6 hole (3/4 cup/180ml capacity) muffin pan.

    Sift dry ingredients into large bowl, stir in remaining ingredients.

    Spoon mixture into prepared pan.

    Preheat oven to 190°C (170°C fan-forced). Bake about 25 minutes.
