White Christmas

This recipe for white Christmas slice is a good one to make at this time of year. It stores well for a few weeks, so make it in advance and pop a few pieces out when guest drop in, or for an after-dinner treat.

Ingredients

White christmas
  • 1 1/4 cup (45g) rice bubbles
  • 1 cup (100g) powdered milk
  • 1 cup (160g) pure icing sugar
  • 1 cup (160g) raisins or sultanas
  • 1 cup (90g) desiccated coconut
  • 2 100 g packets mixed glace cherries
  • 180 gram copha, melted and cooled
  • 90 gram white chocolate, melted (optional)

Method

    Line a 18cm x 28cm lamington pan with foil, allowing ends to overhang.

    Combine all dry ingredients and fruit in a large bowl. Add copha, mixing well.
