Ingredients

Witlof gratin
  • 2 witlof, cored
  • 1 tablespoon olive oil
  • 1 small red onion, finely chopped
  • 1 small leek, finely chopped
  • 1/4 cup (15g) multigrain breadcrumbs
  • 1/4 cup finely chopped parsley
  • 75 gram blue cheese, roughly chopped

Method

Witlof gratin
  • 1
Remove 18 leaves from witlof and set aside. Finely slice the remaining leaves.
  • 2
Preheat grill to high. Line a large baking tray with non-stick baking paper. Arrange witlof leaves on tray.
  • 3
Heat oil in a frying pan on medium. Saute sliced witlof, onion and leek for 3-5 minutes, or until starting to soften. Add breadcrumbs and parsley, and cook for 2 minutes, stirring until well combined.
  • 4
Remove from heat and stir through blue cheese. Place tablespoons of mixture into leaves on prepared tray. Grill for 2-3 minutes, until filling starts to colour. Serve.

Notes

Use radicchio leaves in place of witlof (or a combination of both), if desired. Filling can be made 2 hours ahead, then place in leaves and grill, just before guests arrive.
