Witlof gratin
The perfect finger food for a cocktail party, or just a delicious starter or side for your next family dinner, these scrumptious witlof leaves are stuffed with breadcrumbs and creamy blue cheese for a real flavour hit!

Ingredients
Witlof gratin
- 2 witlof, cored
- 1 tablespoon olive oil
- 1 small red onion, finely chopped
- 1 small leek, finely chopped
- 1/4 cup (15g) multigrain breadcrumbs
- 1/4 cup finely chopped parsley
- 75 gram blue cheese, roughly chopped
Method

1Remove 18 leaves from witlof and set aside. Finely slice the remaining leaves.

2Preheat grill to high. Line a large baking tray with non-stick baking paper. Arrange witlof leaves on tray.

3Heat oil in a frying pan on medium. Saute sliced witlof, onion and leek for 3-5 minutes, or until starting to soften. Add breadcrumbs and parsley, and cook for 2 minutes, stirring until well combined.

4Remove from heat and stir through blue cheese. Place tablespoons of mixture into leaves on prepared tray. Grill for 2-3 minutes, until filling starts to colour. Serve.
Notes
Use radicchio leaves in place of witlof (or a combination of both), if desired. Filling can be made 2 hours ahead, then place in leaves and grill, just before guests arrive.
