Dip these fritters into a tangy yoghurt sauce for a tasty shared plate or light lunch.

Ingredients

  • 2 cup self-raising flour
  • 1 teaspoon baking powder
  • 2 cooked, thinly sliced thin sausages
  • 1 grated zucchini
  • 1 cup grated tasty cheese
  • 3 green onions, finely sliced
  • 1 3/4 cup milk
  • 60 gram melted butter
  • 1 egg
  • 1 tablespoon olive oil
  • salad leaves, to serve
Spiced yoghurt
  • 1 cup natural yogurt
  • 1 grated zest, 1 tablespoon juice lemon
  • 1/2 teaspoon curry powder

Method

  • 1
    Sift flour and baking powder together into a large bowl. Add sausage, zucchini, cheese and green onions. Gradually stir in combined milk, butter and egg. Season to taste.

    Heat oil in a large frying pan on medium. Working in batches, cook 1/4-cups of mixture 2-3 minutes, until bubbles appear on surface and underside is golden. Turn and cook another minute. Set aside, covered.

    In a small bowl, combine all spiced yoghurt ingredients. Season to taste. Serve with fritters, yoghurt and salad leaves.
