Ingredients
西葫芦gems with orange honey butter
- 30 gram butter
- 2/3 cup (150g) caster sugar
- 1 egg
- 1 small (90g) zucchini, finely grated
- 2 tablespoon dried currants
- 1 1/4 cup (185g) self-raising flour
- pinch ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/4 cup (60ml) milk
Orange honey butter
- 100 gram butter, softened
- 2 tablespoon grated orange rind
- 2 tablespoon orange marmalade
- 1/2 teaspoon mixed spice
- 2 tablespoon honey
Method

1Beat butter, sugar and egg in small bowl with electric mixer until just combined. Stir in zucchini and currants, then sifted flour and spices with milk in two batches.

2Drop tablespoons of mixture into hot gem irons.

3Preheat oven to 200°C (180°C fan-forced); bake 10 minutes. Turn onto wire rack.

4To make orange honey butter; beat butter and rind in small bowl with electric mixer until smooth; stir in remaining ingredients.

Notes
Heat ungreased gem irons in hot oven for 5 minutes just before use; grease with cooking oil spray.
