Ingredients

- 750 gram zucchini, unpeeled, grated coarsely
- 2 tablespoon coarse cooking salt (kosher salt)
- 2 green-skinned apples (400g), peeled, cored, chopped coarsely
- 2 brown onions (300g), chopped coarsely
- 1 cup (150g) sultanas
- 2 cup (500ml) cider vinegar
- 2 teaspoon brown mustard seeds
- 1 teaspoon ground coriander
- 1 cup (220g) white (granulated) sugar

1Place zucchini in medium non-metallic bowl; sprinkle with salt, mix well. Cover; stand 2 hours.

2Rinse and drain zucchini mixture well; squeeze excess water from zucchini, drain on absorbent paper.

3Combine zucchini, apple, onion, sultanas, vinegar and spices in medium saucepan; bring to the boil. Reduce heat; simmer, uncovered, stirring occasionally, about 20 minutes or until mixture is pulpy. Add sugar; stir over high heat, without boiling, until sugar dissolves. Bring to the boil. Reduce heat; simmer, uncovered, stirring occasionally, about 15 minutes or until relish is thick.

4Spoon hot relish into hot sterilised jars; seal immediately. Label and date jars when cold.
Notes
Granny Smith apples are best for this recipe.
