Ingredients

  • 750 gram zucchini, unpeeled, grated coarsely
  • 2 tablespoon coarse cooking salt (kosher salt)
  • 2 green-skinned apples (400g), peeled, cored, chopped coarsely
  • 2 brown onions (300g), chopped coarsely
  • 1 cup (150g) sultanas
  • 2 cup (500ml) cider vinegar
  • 2 teaspoon brown mustard seeds
  • 1 teaspoon ground coriander
  • 1 cup (220g) white (granulated) sugar

    Place zucchini in medium non-metallic bowl; sprinkle with salt, mix well. Cover; stand 2 hours.

    Rinse and drain zucchini mixture well; squeeze excess water from zucchini, drain on absorbent paper.

    Combine zucchini, apple, onion, sultanas, vinegar and spices in medium saucepan; bring to the boil. Reduce heat; simmer, uncovered, stirring occasionally, about 20 minutes or until mixture is pulpy. Add sugar; stir over high heat, without boiling, until sugar dissolves. Bring to the boil. Reduce heat; simmer, uncovered, stirring occasionally, about 15 minutes or until relish is thick.

    Spoon hot relish into hot sterilised jars; seal immediately. Label and date jars when cold.

Notes

Granny Smith apples are best for this recipe.
