Ingredients
All-day breakfast
- 8 eggs
- 1/3 cup cream
- 1/3 cup shaved parmesan
- 8 slices chopped pancetta
- 100 gram roasted button mushrooms
- 100 gram roasted cherry tomatoes
- 8 slice thick bread, toasted
Method
All-day breakfast

1In a large bowl, whisk together eggs, cream and parmesan.

2Season to taste. Heat a large, lightly greased non-slick frying pan on high.

4Add egg mixture to pan and stir over a low heat for 2-3 minutes until almost set. Remove from heat.

5Serve with toast, tomatoes and mushrooms.
