Ingredients

All-day breakfast
  • 8 eggs
  • 1/3 cup cream
  • 1/3 cup shaved parmesan
  • 8 slices chopped pancetta
  • 100 gram roasted button mushrooms
  • 100 gram roasted cherry tomatoes
  • 8 slice thick bread, toasted

Method

All-day breakfast

    In a large bowl, whisk together eggs, cream and parmesan.

    Season to taste. Heat a large, lightly greased non-slick frying pan on high.

    Add egg mixture to pan and stir over a low heat for 2-3 minutes until almost set. Remove from heat.

    Serve with toast, tomatoes and mushrooms.
