Angel hair pasta with prawns

Ingredients
Angel hair pasta with prawns
- 50 gram butter
- 1 teaspoon chilli oil
- 3 garlic cloves, thinly sliced
- 300 gram green prawns, peeled, deveined, halved lengthways
- 250 gram punnet cherry tomatoes
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 500 gram angel hair pasta
- 100 gram snow peas, blanched, sliced
- 50 gram feta, crumbled
- basil leaves, to serve
Method
Angel hair pasta with prawns

1Heat butter and oil together in a large frying pan on medium until foaming.

2Saute garlic 30 seconds, until fragrant. Add prawns and cook 2-3 minutes, stirring occasionally, until almost cooked through.

3Add tomatos, juice and zest and cook 2-3 minutes, until tomatoes soften slightly.

4Meanwhile, cook pasta in a large saucepan of boiling salted water following packet instructions. Drain well and reserve 2 tablespoons cooking liquid.

5Add pasta to frying pan with snow peas and reserved water. Season to taste and toss well. Serve topped with crumbled feta and basil leaves.
Notes
Wine suggestion: Serve this dish with a glass of chilled Riesling Rose.
