Apple and spice souffles
The flavours of warm apple and delicate chai spices work perfectly in this fluffy French dessert.

Ingredients
Apple and spice souffles
- 1/2 cup caster sugar
- 1 1/2 cup apple, peeled, coarsely chopped
- 1 tablespoon water
- 1/2 teaspoon ground cinnamon
- 1 pinch ground cloves
- 1 pinch ground nutmeg
- 3 egg whites
- 1 tablespoon cinnamon sugar
Method

1Preheat oven to hot, 200°C (180°C fan-forced). Spray four 3/4-cup ramekins with oil spray. Sprinkle with 2 tablespoons of the caster sugar, shaking out excess. Arrange on a baking tray.

2In a small saucepan, combine apple, 2 tablespoons of caster sugar, water and spices. Cook uncovered, on medium heat, for 8-10 minutes until apples soften. Using a hand blender, process until smooth. Transfer to a medium heatproof bowl.

3In a small bowl, using an electric mixer, beat egg whites until soft peaks form. Gradually add remaining caster sugar, beating until firm peaks form and sugar dissolves. Lightly fold into warm apple mixture.

4Divide mixture evenly between prepared ramekins. Sprinkle evenly with cinnamon sugar. Bake for 10-15 minutes, until puffed and golden. Serve immediately.
Notes
You will need about 2 medium apples for this recipe.
