Apple pecan bread

Somewhere between a slice, a bread and a cake, this divine dessert pecan bread pairs crunchy, nutty pecans with soft, syrupy apples.

Ingredients

Apple pecan bread
  • 2 cup plain flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 cup caster sugar
  • 2 green apples, peeled, cored, grated
  • 1 cup coarsely chopped pecans, toasted
  • 125 gram butter, melted
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
Caramelised apple
  • 60 gram butter
  • 1/4 cup brown sugar
  • 2 apples, cored, finely sliced

Method

    Preheat oven to moderate, 180°C (160°C fan-forced). Lightly grease and line a 10cmx20cm loaf pan with baking paper.

    Sift flour, baking powder and cinnamon together into a large bowl. Stir in the sugar, apples and pecans.

    In a large jug, combine butter, eggs and vanilla. Fold into dry ingredients, until combined. Pour mixture into pan.

    Bake 55-60 minutes, until cooked when tested with a skewer. Serve warm with caramelised apple.

    To make caramelised apple: Melt butter and brown sugar in a frying pan. Add apple slices. Stir over a low heat until caramelised and tender.
