Apple pecan bread
Somewhere between a slice, a bread and a cake, this divine dessert pecan bread pairs crunchy, nutty pecans with soft, syrupy apples.

Apple pecan bread
- 2 cup plain flour
- 2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1 cup caster sugar
- 2 green apples, peeled, cored, grated
- 1 cup coarsely chopped pecans, toasted
- 125 gram butter, melted
- 2 eggs, lightly beaten
- 1 teaspoon vanilla extract
Caramelised apple
- 60 gram butter
- 1/4 cup brown sugar
- 2 apples, cored, finely sliced
Method

1Preheat oven to moderate, 180°C (160°C fan-forced). Lightly grease and line a 10cmx20cm loaf pan with baking paper.

2Sift flour, baking powder and cinnamon together into a large bowl. Stir in the sugar, apples and pecans.

3In a large jug, combine butter, eggs and vanilla. Fold into dry ingredients, until combined. Pour mixture into pan.

4Bake 55-60 minutes, until cooked when tested with a skewer. Serve warm with caramelised apple.

5To make caramelised apple: Melt butter and brown sugar in a frying pan. Add apple slices. Stir over a low heat until caramelised and tender.
