Asparagus penne with garlic crumbs
Tender asparagus, salty prosciutto, crunchy garlic crumbs and rich blue cheese make this easy pasta dish a winner.

Asparagus penne with garlic crumbs
- 375 gram penne pasta
- 4 slice prosciutto
- 30 gram butter
- 1/2 cup fresh breadcrumbs
- 1 clove garlic, crushed
- 1 bunch asparagus, trimmed, halved
- 60 gram creamy blue cheese, crumbled
Method
Asparagus penne with garlic crumbs

1Preheat oven to medium hot (180°C). Line an oven tray with baking paper.

2Cook pasta in a large saucepan of boiling salted water, following packet instructions. Drain well.

3Place prosciutto in a single layer on oven tray. Bake for 3-5 minutes, until crisp. Set aside.

4Melt half the butter in a large frying pan on high. Fry breadcrumbs and garlic for 3-4 minutes, until crisp and golden. Transfer to a bowl and set aside.

5Add asparagus to same pan with remaining butter and cook for 1-2 minutes, until just tender.

6Return pasta to pan with blue cheese. Toss well. Season to taste.

7Serve topped with crispy prosciutto and garlic crumbs. Garnish with parsley, if liked.
Notes
Chopped brie can be used in place of blue cheese. This dish works equally well with olive oil instead of butter.
