Ingredients

Baba ghanoush
  • 2 eggplants (460g)
  • 1/3 cup (95g) low-fat yogurt
  • 1 tablespoon lemon juice
  • 2 clove garlic, crushed
  • 1 teaspoon tahini
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sesame oil
  • 2汤匙finely chopped fresh coriander

    Preheat oven to 200°C (180°C fan-forced).

    Halve eggplants lengthways; place on oven tray. Bake for about 35 minutes or until tender.

    Cool; remove and discard skin. Blend or process eggplant with remaining ingredients until smooth. Cover; refrigerate 30 minutes.
