Ingredients
Baba ghanoush
- 2 eggplants (460g)
- 1/3 cup (95g) low-fat yogurt
- 1 tablespoon lemon juice
- 2 clove garlic, crushed
- 1 teaspoon tahini
- 1 teaspoon ground cumin
- 1/2 teaspoon sesame oil
- 2汤匙finely chopped fresh coriander
Method
Baba ghanoush

1Preheat oven to 200°C (180°C fan-forced).

2Halve eggplants lengthways; place on oven tray. Bake for about 35 minutes or until tender.

3Cool; remove and discard skin. Blend or process eggplant with remaining ingredients until smooth. Cover; refrigerate 30 minutes.
