Baked beans with chorizo sausage
  • 500 gram cannellini beans
  • 1 teaspoon plain flour
  • 2 400g tins diced tomatoes
  • 10 clove garlic, peeled
  • 3 springs sage
  • 1 cup (250ml) olive oil
  • 3 cup (750ml) water
  • sea salt and pepper
  • 1 smoked ham hock
  • 2 chorizo sausages
  • ciabatta bread, to serve

Method

    Place the beans into a large into a large bowl with the teaspoon of flour, cover with plenty of cold water and leave to soak for 8 hours.

    Preheat oven to 180°C.

    Rinse beans well and transfer them to a casserole dish. Add the smoked ham hock and chorizo sausages, cover with a tight-fitting lid and cook in the oven for 3-4 hours or until the beans are cooked through.

    Remove the chorizo sausages, slice and return to the pot. Serve the beans hot from the pot with char-grilled ciabatta bread.
