Ingredients

Baked fish with chermoula
  • 1/2 cup chopped coriander
  • 2 tablespoon olive oil
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • 1 lemon, rind grated and juiced
  • 8 fish fillets (100g each)
  • 1 cup (200g) couscous
  • 1 1/4 cup boiling water
  • steamed green and butter beans, to serve

Method

    Preheat oven to 180°C. Line a baking tray with foil.

    In a bowl, combine half of coriander, oil, spices and half of lemon rind to make chermoula. Place fish in a shallow baking dish. Spoon over chermoula. Stand for 10 minutes.

    Arrange fish on prepared tray. Bake for 5-7 minutes, until cooked through.

    Place couscous and remaining rind in a bowl. Pour over lemon juice and boiling water. Cover with plastic wrap. Stand for 5 minutes. Fluff with a fork. Stir through remaining coriander. Season to taste.

    Serve couscous with fish and beans.
