Ingredients
Baked fish with chermoula
- 1/2 cup chopped coriander
- 2 tablespoon olive oil
- 1 tablespoon paprika
- 1 teaspoon ground cumin
- 1 lemon, rind grated and juiced
- 8 fish fillets (100g each)
- 1 cup (200g) couscous
- 1 1/4 cup boiling water
- steamed green and butter beans, to serve
Method
Baked fish with chermoula

1Preheat oven to 180°C. Line a baking tray with foil.

2In a bowl, combine half of coriander, oil, spices and half of lemon rind to make chermoula. Place fish in a shallow baking dish. Spoon over chermoula. Stand for 10 minutes.

3Arrange fish on prepared tray. Bake for 5-7 minutes, until cooked through.

4Place couscous and remaining rind in a bowl. Pour over lemon juice and boiling water. Cover with plastic wrap. Stand for 5 minutes. Fluff with a fork. Stir through remaining coriander. Season to taste.

5Serve couscous with fish and beans.
