Ingredients
Baked fish with noodles
- 1 large carrot, cut into matchsticks
- 1 large red capsicum, cut into matchsticks
- 227 gram packet chow mein noodles
- 5 medium_piece fresh ginger, cut into matchsticks
- 2 clove garlic, thinly sliced
- 2 green onions, thinly sliced
- 1/4 cup light soy sauce
- 1 tablespoon sesame oil
- 6 150g firm white fish fillets
- 1/3 cup chopped coriander
- 1 tablespoon toasted sesame seeds
- lemon wedges, to serve
- sweet chilli sauce, to serve
Method
Baked fish with noodles

1Preheat oven to 220°C (200°C fan-forced). Combine carrot. capsicum, noodles, ginger, garlic and onion in a large bowl.

2Combine soy sauce and sesame oil in a small bowl.

3Tear baking paper into 6 x 80cm squares. For each piece of fish, place a piece of paper on a flat work surface. Top with 1/6 of the noodle mixture. Top with a piece of fish, drizzle with 3 teaspoons of soy mixture. Fold paper edges to enclose fish and form parcels. Place in a roasting pan.

4Bake parcels for 10 minutes or until fish flakes easily. Place open parcels on plates. Top with coriander and sesame seeds. Serve with lemon wedges and sauce.
Notes
You could use chicken breast fillets instead of fish; cooking time will vary. If time permits, marinate fish overnight in soy sauce for extra flavour.
