Balmain bugs with oregano
Balmain bugs, otherwise known as butterfly fan lobster, was used in this recipe, but you could also use the same weight of scampi or uncooked large king prawns.

Balmain bugs with oregano
- 16 uncooked medium balmain bugs (3.2kg), halved, cleaned
- 1/4 cup dry white wine
- 1/4 cup lime juice
- 1/4 cup olive oil
- 2 clove garlic, crushed
- 2 tablespoon finely chopped fresh oregano
Method
Balmain bugs with oregano

1Combine bugs with remaining ingredients in large bowl. Cover; refrigerate at least 20 minutes or until required.

2Drain bugs over small bowl; reserve marinade. Cook bugs in heated oiled grill pan, brushing occasionally with reserved marinade, until just changed in colour.

3Serve bugs sprinkled with extra chopped fresh oregano, if desired.
