Banana bran rolls

Ingredients
Banana bran rolls
- 90 gram butter
- 1/2 cup brown sugar
- 2 eggs
- 1 cup dates, chopped
- 1/2 cup walnuts, chopped
- 1 cup mashed banana (see notes)
- 1/2 cup unprocessed bran
- 1 1/4 cup (185g) wholemeal self-raising flour, sifted
- 1/4 cup milk
Method
Banana bran rolls

1Preheat oven to 180°C (160°C fan-forced).

2Grease 2 8 cm x 17cm nut roll tins (see notes).

3Using an electric mixer, cream butter and sugar in small bowl until light and fluffy; beat in eggs one at a time, beat until combined.

4Stir in dates, walnuts and banana, then bran, flour and milk; stir to combine.

5Spoon mixture into prepared tins; place upright in oven.

6Bake for about 1 hour. Stand rolls in tins, with lids on, for 10 minutes.

7Remove lids, place rolls on a wire rack. Cool, then serve.
Notes
We used 3 bananas in this recipe. When baking with a nut roll tin, place it upright in the oven. Nut roll tins are available at selected stores. If unavailable, use a loaf tin instead. These rolls will keep for about three days.
