Banana, pecan surprise muffins
- 2 cup self-raising flour
- 1/3 cup plain flour
- 1/2 teaspoon bicarbonate of soda
- 1 cup chopped pecans, toasted
- 3/4 cup firmly packed brown sugar
- 2/3 cup mashed banana
- 1 cup buttermilk
- 1/3 cup vegetable oil

1Preheat oven to 180°C. Lightly grease a 12-hole muffin pan (or line with paper patty cases).

2Sift flours and soda together into a large bowl. Stir in pecans and sugar. In a jug, whisk banana, buttermilk, oil and eggs together. Fold into flour mixture until just combined - do not over-mix.

3Spoon 1 tablespoon mixture into each recess, topping with a square of chocolate. Spoon remaining mixture over each, until three-quarters full. Place 2 banana chips on each.

4Bake 20-25 minutes, until cooked when tested with a skewer. Serve warm.
