  • 2 cup self-raising flour
  • 1/3 cup plain flour
  • 1/2 teaspoon bicarbonate of soda
  • 1 cup chopped pecans, toasted
  • 3/4 cup firmly packed brown sugar
  • 2/3 cup mashed banana
  • 1 cup buttermilk
  • 1/3 cup vegetable oil

    Preheat oven to 180°C. Lightly grease a 12-hole muffin pan (or line with paper patty cases).

    Sift flours and soda together into a large bowl. Stir in pecans and sugar. In a jug, whisk banana, buttermilk, oil and eggs together. Fold into flour mixture until just combined - do not over-mix.

    Spoon 1 tablespoon mixture into each recess, topping with a square of chocolate. Spoon remaining mixture over each, until three-quarters full. Place 2 banana chips on each.

    Bake 20-25 minutes, until cooked when tested with a skewer. Serve warm.
