A surefire family favourite - barbecue chicken with lemon and garlic is tender and tasty. Serve with good bread and a fresh green salad for a simple weekend lunch.

Ingredients
Barbecued chicken with lemon and garlic
- 1.5 kilogram chicken pieces on the bone
- 2 teaspoon ground allspice
- 1 teaspoon salt
- 2 teaspoon cracked black pepper
- 6 clove garlic, crushed
- 1 teaspoon finely grated lemon rind
- 1 tablespoon finely chopped fresh mint leaves
- 1/2 cup (125ml) olive oil
- 1/2 cup (125ml) lemon juice
Method
Barbecued chicken with lemon and garlic

1Make two deep cuts in thickest part of each chicken piece.

2Combine remaining ingredients in large shallow dish; add chicken, mix well. Cover; refrigerate 3 hours or overnight.

3Drain chicken over medium bowl; reserve marinade. Barbecue (or grill or char-grill) chicken until browned all over and cooked through, brushing with reserved marinade occasionally during cooking.
