Ingredients
Barbecued garlic prawns bruschetta
- 1 kilogram peeled, deveined, tails intact medium green prawns
- 1/3 cup olive oil, plus extra for brushing
- 3 cloves, crushed garlic
- sourdough loaf or baguette, cut in 1.5 cm slices
- 1/2 cup parsley, roughly chopped
- lemon halves, to serve
Method
Barbecued garlic prawns bruschetta

1In a bowl, combine prawns, oil and garlic, tossing well. Season to taste.

2Preheat barbecue plate and grill on high. Brush bread with extra oil. Char-grill 1-2 minutes each side, until lightly charred.

3Pour prawns onto hot plate with marinade. Cook, turning, 2-3 minutes, until prawns change colour and are cooked through. Toss parsley through.

4Pile onto bruschetta bases. Serve with lemon to squeeze over.
