Ingredients
Bean and pasta bake
- 300 gram penne
- 1 tablespoon oil
- 1 onion, chopped
- 2 clove garlic, crushed
- 3 bacon rashers, rind removed, chopped
- 1 1/2 cup (390g) tomato pasta sauce
- 1/2 cup basil leaves
- 2 420 g cans four-bean mix, drained, rinsed
- 1/2 cup (6og) pitted black olives
- 2 cup (200g) grated mozzarella or pizza cheese
Method

1Preheat oven to 180°C or 160°C fan. Cook penne in a saucepan of boiling, salted water according to packet directions. Drain, reserving 1 cup of cooking water.

2Meanwhile, heat oil in a saucepan on medium. Cook onion for 3 minutes, until soft. Add garlic and bacon and cook for 3 minutes, until bacon is golden. Add pasta sauce with reserved water. Increase heat to high and bring to boil. Reduce heat, add basil and simmer, covered, for 5 minutes.

3Stir through beans and olives. Toss penne with sauce and 3/4 cup of mozzarella and season well. Pour into a 10-cup ovenproof dish. Sprinkle with remaining mozzarella and bake for 15-20 minutes, until cheese is golden. Serve.
