  • 400 gram canned butter beans, rinsed, drained
  • 400 gram canned borlotti beans, rinsed, drained
  • 250 gram cherry tomatoes, quartered
  • 180 gram bocconcini cheese
  • 60 gram baby rocket leaves
  • 1/2 cup roasted pine nuts
Creamy basil dressing
  • 2 tablespoon olive oil
  • 2 tablespoon white wine vinegar
  • 2 tablespoon coarsely chopped fresh basil leaves
  • 1/4 cup pouring cream

    In a large bowl, place all salad ingredients. Pour in dressing and toss well to combine.
