Bean salad with creamy basil dressing
- 400 gram canned butter beans, rinsed, drained
- 400 gram canned borlotti beans, rinsed, drained
- 250 gram cherry tomatoes, quartered
- 180 gram bocconcini cheese
- 60 gram baby rocket leaves
- 1/2 cup roasted pine nuts
Creamy basil dressing
- 2 tablespoon olive oil
- 2 tablespoon white wine vinegar
- 2 tablespoon coarsely chopped fresh basil leaves
- 1/4 cup pouring cream

2In a large bowl, place all salad ingredients. Pour in dressing and toss well to combine.
