Beef fillet curry with couscous
  • 1/4 cup (60ml) mild curry paste
  • 750克全牛柳
  • 2 (300g) brown onions, chopped finely
  • 2 cup (500ml) beef stock
  • 2 cup (400g) couscous
  • 2 (380g) tomatoes, chopped finely
  • 1/3 cup chopped fresh mint leaves
  • 1/3 cup (45g) slivered almonds, toasted

    Rub 1 tablespoon of the paste over beef. Cook beef in large heated, oiled non-stick saucepan, uncovered, until browned all over and cooked as desired. Remove from pan; cover with foil to keep warm.

    Add remaining paste and onion to same pan; cook, stirring, until onion is soft. Add stock, bring to a boil; remove from heat. Stir in couscous; stand, covered, for 5 minutes.

    Using a fork, gently stir tomato, mint and half of the almonds into couscous mixture. Slice beef; serve with couscous and sprinkle with remaining almonds.
