Ingredients
Beef fillet curry with couscous
- 1/4 cup (60ml) mild curry paste
- 750克全牛柳
- 2 (300g) brown onions, chopped finely
- 2 cup (500ml) beef stock
- 2 cup (400g) couscous
- 2 (380g) tomatoes, chopped finely
- 1/3 cup chopped fresh mint leaves
- 1/3 cup (45g) slivered almonds, toasted
Method
Beef fillet curry with couscous

1Rub 1 tablespoon of the paste over beef. Cook beef in large heated, oiled non-stick saucepan, uncovered, until browned all over and cooked as desired. Remove from pan; cover with foil to keep warm.

2Add remaining paste and onion to same pan; cook, stirring, until onion is soft. Add stock, bring to a boil; remove from heat. Stir in couscous; stand, covered, for 5 minutes.

3Using a fork, gently stir tomato, mint and half of the almonds into couscous mixture. Slice beef; serve with couscous and sprinkle with remaining almonds.
