Blueberry and lemon creams

These blueberry and lemon creams are the ultimate no-fuss dessert.

Ingredients

Blueberry and lemon creams
  • 300 millilitre double cream
  • 1/4 cup caster sugar
  • zest of 3 lemons
  • 75 millilitre fresh lemon juice
  • 1/2 cup blueberries
  • whipped cream to serve

Method

Blueberry and lemon creams

    Put the cream in a saucepan with the sugar and stir to dissolve.

    Bring to a rapid simmer. Keep stirring and simmer for exactly 3 minutes.

    Turn off the heat and stir or whisk in the lemon zest and juice. Taste for tartness and add more lemon juice if you prefer.

    Pour into two glasses, cover and chill for at least 3 hours or overnight, to set.
  • 5
    Before serving, top with fresh blueberries and clouds of soft whipped cream.
