Breakfast mezze for two
  • 1 wholemeal pitta bread (70g)
  • cooking-oil spray
  • 2 teaspoon za'atar
  • 2 50g soft-boiled eggs, peeled
  • 1/2 small_piece avocado, thickly sliced
  • 1 medium_piece tomato, thickly sliced
  • 1/3杯低脂意大利乳清干酪
  • 1/4 teaspoon chilli flakes
  • 80 gram rocket leaves
  • 2 lemon wedges

Method

    Preheat grill. Lightly spray pitta bread with oil; sprinkle with za'atar. Cook under hot grill for 2 minutes or until crisp. Break into coarse pieces.

    Place remaining ingredients on a serving platter; sprinkle ricotta with chilli; serve with pitta pieces.

Notes

To make the perfect soft-boiled eggs, place eggs in a small saucepan and barely cover with cold water. Cover the pan and bring to boil; then boil, uncovered, for 3 minutes, drain. Shell eggs when cool enough to handle. You can use either heirloom or cherry tomatoes, if you like.
