Butter chicken with onion sultana pilaf
- 1 tablespoon garam masala
- 1 teaspoon chilli powder
- 2 clove garlic, chopped coarsely
- 4 centimetre piece fresh ginger (20g), grated
- 2 tablespoon lemon juice
- 1/3 cup (90g) tomato paste
- 1 cup (150g) roasted, unsalted cashews
- 1/4 cup (60ml) buttermilk
- 800 gram thigh fillets, chopped coarsely
- 40 gram butter
- 1 brown onion (200g), sliced thinly
- 1 cinnamon stick
- 6 cardamom pods, bruised
- 425 gram can crushed tomatoes
- 3/4 cup (180ml) chicken stock
- 1/4 cup (60ml) buttermilk, extra
- 1/4 cup loosely packed fresh coriander leaves
- 40 gram butter
- 2 brown onions (300g), sliced thinly
- 2 teaspoon yellow mustard seeds
- 1 1/2 cup (300g) basmati rice
- 3 cup (750ml) chicken stock
- 1/3 cup (55g) sultanas
Method

1Dry-fry garam masala and chilli in small frying pan, stirring, until fragrant.

2Blend or process chilli mixture with garlic, ginger, juice, paste, half of the nuts and half of the buttermilk until smooth. Combine nut mixture, remaining buttermilk and chicken in large bowl, cover; refrigerate 3 hours or overnight.

3Melt butter in large saucepan; cook onion, cinnamon and cardamom, stirring, until onion browns. Add undrained chicken mixture; cook, uncovered, 10 minutes, stirring occasionally.

4Add undrained tomatoes and stock; bring to a boil. Reduce heat; simmer, uncovered, stirring occasionally, about 35 minutes or until chicken is cooked through and mixture thickens slightly. Remove from heat; discard cinnamon. Stir in extra buttermilk.

5Meanwhile make onion and sultana pilaf. Melt butter in medium saucepan; cook onion and seeds, stirring, until onion browns lightly. Add rice; cook, stirring, 1 minute. Stir in stock and sultanas; bring to a boil. Reduce heat; simmer, covered tightly, about 25 minutes or until rice is just tender and liquid has been absorbed. Remove from heat; fluff rice with fork. Stand, covered, for 5 minutes.

6Coarsely chop remaining nuts.

7Serve chicken with pilaf, topped with chopped nuts and coriander.
