Buttery garlic prawns
These spicy prawns with fresh coriander and lime would make a stunning tapas dish.

Ingredients
Buttery garlic prawns
- 2 fresh long red chillies
- 2 tablespoon olive oil
- 100 gram (3 ounces) butter
- 400 gram (12½ ounces) uncooked shelled medium prawns (shrimp)
- 1 tablespoon crushed garlic
- 2 tablespoon lime juice
- 1/4 cup loosely packed fresh coriander leaves (cilantro)
- 1 medium lemon, cut into wedges
Method
Buttery garlic prawns

1Finely slice chillies.

2Heat oil and butter in large frying pan over high heat; cook prawns with chilli, garlic and juice, stirring, about 3 minutes or until prawns just change colour. Season.

3Sprinkle prawns with coriander; accompany with lemon wedges. Serve with jasmine rice, if you like.
