Buttery garlic prawns

These spicy prawns with fresh coriander and lime would make a stunning tapas dish.

Ingredients

Buttery garlic prawns
  • 2 fresh long red chillies
  • 2 tablespoon olive oil
  • 100 gram (3 ounces) butter
  • 400 gram (12½ ounces) uncooked shelled medium prawns (shrimp)
  • 1 tablespoon crushed garlic
  • 2 tablespoon lime juice
  • 1/4 cup loosely packed fresh coriander leaves (cilantro)
  • 1 medium lemon, cut into wedges

Method

    Finely slice chillies.

    Heat oil and butter in large frying pan over high heat; cook prawns with chilli, garlic and juice, stirring, about 3 minutes or until prawns just change colour. Season.

    Sprinkle prawns with coriander; accompany with lemon wedges. Serve with jasmine rice, if you like.
