Ingredients
Cajun dirty rice
- 1 1/2 cup (300g) basmati rice
- 1/4 cup (60ml) extra virgin olive oil
- 3 rashers (240g) bacon, chopped
- 1 tablespoon cajun spice mix
- 500 gram minced pork
- 1 small (100g) red onion, chopped
- 2 celery stalks, chopped
- 1 large (350g) red capsicum, diced
- 1/3 cup (60g) chopped bottled jalapeno peppers
- 1 cup (250ml) chicken stock
- 2 green onions (green shallots), sliced finely
Method

1Cook rice according to packet directions; drain.

2Meanwhile, in a large casserole dish or large frypan, add 1 tablespoon of oil and cook the bacon until crispy. Add cajun spice mix and pork mince, and continue to cook over a medium to high heat until the pork is brown. Add the remaining oil, red onion, celery, capsicum and jalapenos, and continue to cook until the onion is soft. Add the chicken stock and deglaze the pan by scraping the bottom of the pan with a wooden spoon. Simmer until most of the stock has evaporated, then fold through the rice.

3Scatter with the green onions and serve.
Notes
Suitable to freeze. Rice suitable to microwave.
