Cajun fish wrap

Ingredients
Cajun fish wrap
- 1/2 cup cornflour
- 2 tablespoon cajun spice
- 2 tablespoon olive oil
- 30 gram butter
- 4 boneless white fish fillets
- 4 slice lebanese bread
- 1/2 cup whole egg mayonnaise
- 80 gram whole baby spinach leaves
- 8 slices cheddar, halved
- 1 avocado, stone removed, peeled, finely chopped
Method
Cajun fish wrap

1In a large bowl, combine cornflour and spice; season to taste.

2Heat oil and butter together in a frying pan on high. Dust fish in flour mixture, shaking off excess. Fry for 1-2 minutes each side until flesh flakes easily when tested with a fork. Drain well on paper towel.

3Meanwhile, spread bread with mayonnaise. Top with spinach, cheese and avocado. Finish with a piece of fish halved length ways. Wrap and serve.
Notes
This would also be delicious with chicken or veal schnitzels. Use shredded or torn iceberg lettuce in place of spinach, if preferred.
