Ingredients
Calamari and orange salad
- 200 gram calamari rings
- 1 tablespoon olive oil
- 100 gram mixed baby asian leaves
- 2 oranges, segmented
- 1 small red onion, thinly sliced
- 1/2 cup artichoke halves
- 1/2 lebanese cucumber, sliced
- 1 tablespoon torn mint leaves
Dressing
- 1/4 cup (60ml) olive oil
- 1/4 cup (60ml) orange juice
- 1 garlic clove, crushed
- 1/4 teaspoon dijon mustard
Method
Calamari and orange salad

1Preheat a chargrill or barbecue plate. Toss calamari rings with olive oil in a bowl. Cook on grill for 1-2 minutes each side. Transfer to a large bowl.

2While calamari is still warm, add mixed baby asian leaves, orange segments, red onion, artichoke halves, cucumber and mint leaves, and toss well.

3Make Dressing as per method below. Pour over salad and toss to combine. Serve.

4Whisk all ingredients together in a jug.
Notes
If calamari rings are unavailable, purchase cleaned hoods and slice into 0.5cm-wide rings.
