Ingredients

Carbonara chicken parcels
  • 250 gram spaghetti
  • 575 gram jar carbonara pasta sauce
  • 1 medium carrot, cut into matchsticks
  • 100 gram green beans, cut in half diagonally
  • 1 small red capsicum, sliced
  • 4 button mushrooms, sliced
  • 400 gram chicken thigh fillets, trimmed, thinly sliced
  • 1 tablespoon chopped flatleaf parsley
  • 2 tablespoon grated parmesan

    Preheat oven to 180°C (160°C fan-forced). Tear 4 x 40cm sheets of foil; place on a flat surface. Top each sheet with a piece of baking paper.

    Cook pasta in a large saucepan of boiling salted water 10 minutes, or until tender. Drain; return to pan. Add sauce to pan; remove from heat. Combine vegetables in a large bowl.

    For each parcel, place one-quarter of pasta on prepared paper; top with one-quarter of the vegetables and chicken. Fold foil (and paper) to enclose filling and form a parcel.

    Place parcels on a baking tray; bake 20-25 minutes, or until chicken is cooked.

    Unwrap parcels; carefully transfer pasta to shallow bowls. Serve sprinkled with parsley and parmesan.
