Cheese and tomato tart
This Mexican spiced cheese and tomato tart uses brilliant shortcuts to create a delicious savoury dish for your family in no time at all.

Ingredients
Cheese and tomato tart
- 6 (240g) wholegrain tortillas
- cooking oil spray
- 300 gram light sour cream
- 4 eggs, at room temperature
- 1 1/2 tablespoon mexican seasoning
- 1 cup grated low-fat cheddar cheese
- 1 tomato, thinly sliced
- mixed salad, to serve
Method
Cheese and tomato tart

1Preheat oven to 180°C (160°C fan-forced). Line the base of a 20cm spring form pan. Spray tortillas with oil on both sides. Place 1 tortilla in the base of prepared pan. Arrange remaining tortillas up the side of pan, overlapping on base of pan.

2Whisk cream, eggs and most of the seasoning in a jug. Stir in cheese. Season. Pour mixture into tortilla crust in pan.

3Arrange tomato slices over top of cheese mixture, sprinkle with remaining seasoning. Bake for 30 minutes or until puffed and golden (centre should wobble but not be runny). Stand For 10 minutes in pan. Serve tart sliced, with salad.
Notes
Tart is at its best made just before serving.
