Cheese and walnut shortbreads
- 185 gram butter, diced
- 1 1/2 cup (180g) finely grated cheddar
- 1/4 cup (20g) grated parmesan
- 1 1/2 cup (225g) plain flour, sifted
- 1 teaspoon paprika
- 2 tablespoon finely chopped walnuts
Method
Cheese and walnut shortbreads

1Preheat oven to 180°C. Line two baking trays with baking paper. Using an electric mixer, cream butter, cheddar and parmesan together.

2Stir in flour, paprika, walnuts and 1 teaspoon salt. Mix well until dough forms a ball. Divide in half, pat each into a thick round and wrap in plastic wrap. Chill for 1 hour.

3Roll out dough thinly. Cut out shapes using a 5cm star cutter. Re-roll trimmings to make more stars. Place biscuits onto prepared trays.

4Bake in batches for 12-15 minutes, until golden. Cool completely. Store in airtight containers or seal in cellophane bags to give as gifts.
Notes
To make the dough with a food processor, use the metal. double-bladed knife attachment to process all ingredients for 20 seconds, until a ball forms. Lightly knead the mixture together to form a smooth dough.
