Ingredients

Cheesy chicken macaroni bites
  • 1 cup macaroni
  • 1 cup shredded cooked chicken
  • 1 zucchini, coarsely grated
  • 1 cup grated mozzarella cheese
  • 1/2 cup sour cream
  • 1/2 cup plain flour
  • 2 eggs, lightly whisked
  • 2 cup packaged dried multigrain breadcrumbs
  • cooking oil spray
  • sweet chilli sauce, to serve

Method

Cheesy chicken macaroni bites
  • 1
Preheat oven to 220°C (200°C fan-forced). Line a baking tray with baking paper.
  • 2
Cook pasta in a saucepan of boiling salted water for 6 minutes or until almost tender. Don't overcook; pasta will continue cooking when baked. Drain. Return to pan.
  • 3
Add chicken, zucchini, mozzarella and sour cream; cook and stir over moderate heat for 3 minutes or until cheese melts. Cool.
  • 4
Using slightly damp hands, shape cooled mixture into 24 balls. Place flour, egg and breadcrumbs in 3 separate shallow bowls. Roll balls in flour to coat, then in egg, then in breadcrumbs. Transfer to prepared tray. Chill for 15 minutes to set the crumb.
  • 5
Spray bites with oil. Bake, turning occasionally, for 15 minutes or until golden and crisp. Serve with sweet chilli sauce.

Notes

If bites burst during cooking, tum oven temperature to a lower heat; cook until golden. You'll need 1/4 small barbecued chicken, skin and bones removed.
