Cheesy chicken macaroni bites
- 1 cup macaroni
- 1 cup shredded cooked chicken
- 1 zucchini, coarsely grated
- 1 cup grated mozzarella cheese
- 1/2 cup sour cream
- 1/2 cup plain flour
- 2 eggs, lightly whisked
- 2 cup packaged dried multigrain breadcrumbs
- cooking oil spray
- sweet chilli sauce, to serve
Method

1Preheat oven to 220°C (200°C fan-forced). Line a baking tray with baking paper.

2Cook pasta in a saucepan of boiling salted water for 6 minutes or until almost tender. Don't overcook; pasta will continue cooking when baked. Drain. Return to pan.

3Add chicken, zucchini, mozzarella and sour cream; cook and stir over moderate heat for 3 minutes or until cheese melts. Cool.

4Using slightly damp hands, shape cooled mixture into 24 balls. Place flour, egg and breadcrumbs in 3 separate shallow bowls. Roll balls in flour to coat, then in egg, then in breadcrumbs. Transfer to prepared tray. Chill for 15 minutes to set the crumb.

5Spray bites with oil. Bake, turning occasionally, for 15 minutes or until golden and crisp. Serve with sweet chilli sauce.
Notes
If bites burst during cooking, tum oven temperature to a lower heat; cook until golden. You'll need 1/4 small barbecued chicken, skin and bones removed.
