Ingredients
Cheesy kumara and chive muffins
- 2 cup self-raising flour
- 1 cup coarsely grated kumara, firmly packed
- 2 tablespoon snipped chives
- 2/3 cup buttermilk
- 125 gram butter, melted
- 1 egg, lightly beaten
- 125 gram tasty cheese, cut into 12 small cubes
Method
Cheesy kumara and chive muffins

1Preheat oven to moderate, 180°C. Lightly spray a 12-hole muffin pan with oil.

2Sift flour into a large bowl. Stir in kumara and half the chives. In a jug combine buttermilk, butter and egg. Season to taste.

3Make a well in centre of dry ingredients. Add milk mixture all at once. Mix lightly until just combined. Do not over-mix.

4Spoon batter into muffin-pan recesses until 2/3 full. Press a cube of cheese into each. Sprinkle with remaining chives.

5Bake for 25-30 minutes until cooked when tested. Serve muffins warm.
Notes
When mixing muffin batter, 16 strokes is usually enough. Over-mixing the batter will make the muffins dry and rubbery.
