Ingredients
Cherry and nut biscuits
- 125 gram low-fat spread
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cup self-raising flour, sifted
- 1/2 cup chopped glaze cherries, plus extra quarters, to decorate
- 1/4 cup chopped pecans (optional )
- finely grated zest of 1/2 orange
Method
Cherry and nut biscuits

1Preheat oven to moderately slow, 160°C. Line an oven tray with baking paper.

2In a large bowl, using an electric mixer, beat spread and sugar together until pale and creamy. Beat in egg and vanilla. Fold in flour, followed by cherries, nuts and zest.

3Drop walnut-sized spoonfuls of mixture onto tray. Flatten slightly with a floured fork and top with extra cherry quarters. Bake 15-20 minutes. Cool on trays 5 minutes before transferring to a wire rack to cool completely.
Notes
Store biscuits in an airtight container for up to 4 days.
