Ingredients
Chicken on warm lentil salad
- 4 (800g) breast fillets, cut in half horizontally
- 2 teaspoon olive oil
- 1 (80g) brown onion, finely chopped
- 2 (125g) rashers rindless bacon, finely chopped
- 2 clove garlic, crushed
- 1/4 cup (60ml) dry white wine
- 1/4 cup (60ml) chicken stock
- 2 400g cans lentils, rinsed, drained
- 250 gram cherry tomatoes, quartered
- 1/2 cup fresh flat-leaf parsley leaves
Method
Chicken on warm lentil salad

1Cook on heated oiled grill plate (or grill or barbecue) until browned both sides and cooked through. Cover to keep warm.

2Heat oil in medium saucepan and stir onion, bacon and garlic over heat until bacon is browned and onion is soft.

3Add wine; cook until wine is almost evaporated. Add stock and lentils; cook until lentils are hot and stock is reduced by half. Remove from heat; add tomatoes and parsley, stir gently to combine.

4Serve chicken with lentil salad.
