Ingredients
Chilled tofu with ginger and green onion
- 600 gram silken firm tofu
- 1 (20g) medium piece fresh ginger, grated
- 2 green onions, chopped finely
- 2 teaspoon black sesame seeds, toasted
- 2 japanese mint (shiso) leaves, shredded finely
- 1 teaspoon bonito flakes
- 1 tablespoon japanese soy sauce
- 2 teaspoon chilli sesame oil
Method
Chilled tofu with ginger and green onion

1Press tofu between two chopping boards with weight on top,raise one end; stand for 25 minutes.

2Halve each block of tofu; divide among plates. Top with ginger, onion, seeds, mint and bonito flakes.

3Serve drizzled with sauce and oil.
Notes
Be careful when working with silken tofu as it is very soft and breaks easily. Use a mix of basil and mint leaves if you cannot find japanese mint.
