Ingredients
辣椒猪肉with noodles
- 1 tablespoon vegetable oil
- 1 medium red onion, halved, thinly sliced
- 1 small red capsicum, thinly sliced
- 1 fresh long red chilli, seeded, finely chopped
- 500 gram pork mince
- 410 gram can chopped tomatoes with mixed herbs
- 1/2 cup water
- 350 gram fresh singapore noodles
- 150 gram snow peas, thinly sliced lengthwise
Method

1Heat oil in a large frying pan over moderate heat. Add onion; cook and stir tor 5 minutes or until soft. Add capsicum and chilli; cook and stir for 2 minutes or until softened.

2Add mince; cook, stirring with a wooden spoon to break up lumps, for 5 minutes or until browned. Add tomato and water. Simmer, uncovered, for 8 minutes. Season with salt and pepper.

3Soak noodles in boiling water in a medium heatproof bowl for 5 minutes; stir noodles to separate strands, then drain. Add noodles to mince mixture with snow peas. Spoon into serving bowls. Serve.
Notes
Use chicken mince instead of pork. To blanch vegetables, place in boiling water; leave for 1 minute, then refresh in cold water.
