Chocolate lace cookies
Crispy on the outside, these chocolate lace cookies are chewy on the inside. Just what you need when it's time to sit down with a cup of tea.

Ingredients
Chocolate lace cookies
- 100 gram good-quality dark chocolate, chopped
- 80 gram butter, chopped
- 1 cup (150g) plain flour
- 2 tablespoon cocoa powder
- 1/4 teaspoon bicarbonate of soda
- 1 cup (220g) caster sugar
- 1 egg, beaten lightly
- 1/4 cup (40g) icing sugar
Method
Chocolate lace cookies

1Combine chocolate and butter in a small saucepan. Stir over a low heat until just melted. Transfer to a medium bowl.

2Sift together flour, cocoa and bicarbonate of soda. Stir into chocolate mixture with sugar and egg. Cover and refrigerate, 15 minutes, or until mixture is firm enough to roll into balls.

3Preheat oven to 180°C (160°C fan-forced). Line 2 oven trays.

4Roll level tablespoonfuls of dough into balls. Roll in the sifted icing sugar. Place on lined trays, about 8cm apart. Bake, 15-20 minutes. Cool on trays.
