Ingredients
Chocolate mousse slice
- 500 gram chopped dark chocolate
- 125 gram chopped butter
- 2 tablespoon golden syrup
- 4 eggs
- 1 tablespoon caster sugar
- 1 tablespoon sifted plain flour
- cocoa, to dust
Coffee mascarpone
- 2 tablespoon instant coffee
- 1 tablespoon boiling water
- 200 gram mascarpone
- 2 tablespoon pure icing sugar
Method

1Preheat oven to 220°C. Lightly grease and line a 20cm square cake pan with baking paper

2In a heatproof bowl, combine chocolate, butter and golden syrup. Stir over a saucepan of simmering water until smooth. Cool slightly.

3In a large bowl, using an electric mixer, beat eggs and sugar together 8-10 minutes, until very thick and pale. Gently fold in flour, then chocolate mixture, until combined. Pour into pan.

4Bake 12-15 minutes. Remove from oven and run a knife around edges. Transfer to the fridge for 1 hour to cool (this step is important as it sets the middle of the cake).

5Meanwhile, to make the coffee mascarpone, dissolve coffee in boiling water and set aside to cool. In a bowl, using an electric mixer, beat mascarpone, coffee mixture and sugar together until thick.

6Cut slice into squares. Serve topped with dollops of mascarpone and sprinkled with sifted cocoa.
